Easy meals for on-campus living

Living on-campus can be a stressful time; sometimes the pressure of having multiple assignments due at once, internships, sport and social events can be enough to cause a bit of a meltdown!

To make your nights a bit easier and take one extra thing off your mind, follow some of these easy meals to cook when living on campus. Not only are they delicious, but incredibly quick and simple:

Zucchini pasta

Convenience is often the reason why we make unhealthy food choices throughout the day, often resorting to McDonalds, two-minute noodles and Nutella toast – let’s be real, we’ve all been there.

To make a healthy choice at dinner time, try out this divine zucchini pasta!

What you will need:

  • 2 zucchinis peeled
  • Tablespoon of olive oil
  • Tablespoon of tahini
  • 1/2 cup of crumbled feta cheese
  • 8 cherry tomatoes
  • 1/4 avocado
  • Pinch of salt

Simply peel or spiralise your zucchini into a bowl and put in the microwave for three minutes until softened.

Add in the toppings and any others of your choice, and you have yourself a delightful pasta dish.

Chia breakfast pudding

This is a healthy, great breakfast for the morning when you’re running out the door for a lecture or simply cannot be bothered to put the effort into making a meal.

This meal is best served when prepared and put in the fridge the night before.

What you will need:

  • 1 cup of chia seeds
  • 3 tablespoons of cocoa powder
  • 1 tablespoon of honey
  • 1 tin of coconut cream
  • Sprinkle of nuts of your choice
  • Handful of blueberries

Combine the chia seeds, coconut cream, cocoa powder and honey into a bowl and cover in cling wrap and put in the fridge overnight.

In the morning, enjoy with some walnuts, blueberries and a nice cup of tea!

Poke bowl

What you will need:

  • 1 tin of tuna
  • 1/2 avocado
  • 1 cup of edamame beans
  • 1 sheet of shredded nori seaweed
  • 1/2 sweet potato roasted
  • 1/2 cucumber
  • 1 cup of boiled rice
  • Sprinkle of sesame seeds
  • 1 cup of bean sprouts
  • 1 tablespoon of soy sauce

Firstly, boil the cup of rice and roast the sweet potato, then add all your topics to make a super healthy and rejuvenating poke bowl.

Zucchini and corn fritters

A great meal and one that will last you a few nights! Zucchini and corn fritters are vitaminrich and will give you the energy you need to battle out those last assessments!

What you will need:

  • 1/3 cup milk
  • 2 eggs
  • 150g zucchini
  • 310g tin corn kernels, drained
  • 1 cup self-raising flour
  • Chopped tomato, to serve
  • Chopped avocado, to serve
  • Coriander leaves, to serve

Whisk the eggs and add in all of the other ingredients. When ready, put a handful at a time of the mixture into the frying pan and cook until golden.

Serve with tomato, avocado and coriander.
